Notes from Table No. 01

On June 27th, ten strangers sat down at our first ever table. The theme was the most personal one we could have opened with: Hosts' Favourites — a menu built entirely from the dishes the two of us love most, the ones we've cooked and craved and argued over for years. If P&A Table was going to introduce itself, it was going to do it honestly.

The menu itself is up on Instagram — see what landed on the table — though, true to form, nobody at the table saw it in advance. Each course introduced itself, one story at a time.

Here's the honest part: Table No. 01 taught us as much as it fed anyone. We learned who we actually needed in the room and who we didn't. We learned what work needs to be done where — what belongs in the days before, what belongs in the kitchen, and what belongs nowhere near the dinner itself. A three-hour table, it turns out, runs on a very long list of invisible decisions.

So we streamlined. We changed how we prep, who does what, and how the evening flows. Every one of those lessons went straight into Table No. 02 — and you can read for yourself how differently that night went.
